After being vegan for a day, you would think I’d be grabbing yogurt or eggs for breakfast. Not so! A green monster with almond milk, banana, PB and lots of spinach did it for me! I even put almond milk in my coffee this morning! Maybe I can commit to one vegan meal a day?
Anyway, about coffee. A while ago I quit coffee. For no particular reason. I just didn’t want it anymore. It was weird. Everyone questioned this decision. I had no idea what could be wrong with me if I wasn’t drinking coffee. I mean, I love the stuff, why don’t I want it? Why didn’t I want to drink it for 8 months? Something is not right in my little world.
Thankfully, whatever spell was cast on me broke.
Coffee and I are friends again, never to part. Truthfully, I don’t even need/care about the caffeine. I genuinely LIKE the taste of coffee. I like having something consistent in the morning, and I like the ritual of it. I really enjoy having a cup on the weekends and savoring every sip. I just love coffee. Bottom line.
I’ve always made it at home, buying it out once in a while, simply to save money. I can’t justify paying for it when I can do it for a fraction of the price in my own kitchen. Sure, I get it out sometimes (how can I resist Starbucks, especially now that the closest one is 40 minutes away?), but for the most part, I run a little coffee shop in my house.
Lately, I’ve been getting a little bored with regular flavored coffee and wanted to kick it up a notch. Since I only use a little milk, the flavored creamers were completely out of the question for me. I started wracking my brain, and thought it might be fun to add things right in with the coffee grinds and let the whole coffee brew with flavor. You know what? I was right! I give you…the easiest way to make flavored coffee at home!
Oh coffee maker how I love you. By the way, I wasn’t so lazy that I was making coffee at noon like the coffee maker suggests. We don’t keep it plugged in when we aren’t using it (how green of us!) so it automatically resets.
So anyway, all you do is add whatever yummy flavor you want right to the grinds. Some favorite add ins include:
- pumpkin pie spice
- pumpkin pie spice and pureed pumpkin
- ground toasted nuts
- a little vanilla extract
- maple sugar
- some coconut
I feel like I’m so brilliant about this! This morning I had some pumpkin pie spice and pureed pumpkin. ‘Twas fabulous!
The only thing better than flavored coffee at home is coffee at my in laws. They have a coffee machine built into the wall. All you do is put your cup in and press a button. I’ll be spending most of next week there, parked in front of the coffee machine. I promise to show you pictures!
I’ve also found when I want a little sweetness in my coffee, either a little stevia or Xagave does the trick to add a sweetness without too much of an artificial taste. I also find it’s a great way to enhance, and really bring out the flavor. By the way, Xagave is fairly new to my kitchen, and I’m really enjoying it. It is a a healthy, natural sugar replacement with a lot less calories than sugar. It is a blend of blue agave and white agave nectar, and is sweeter than sugar, so you need less. It’s a great substitute for sugars and is a prebiotic, meaning the inulin in it promotes healthy lower intestine function, boosts the immune system, increases calcium absorption and increases bone density. I’ve really fallen for agave lately, and am so happy with the taste of Xagave. Plus, there are so many great recipes I can’t wait to try out!
I made some ridiculously strong margaritas the other night using Xagave. I really am not the biggest fan of mixes, and try to make margaritas as fresh as possible at home. I combined 3 oz. tequila, 1 oz. triple sec, 3 oz. lime juice, 1 tbsp. Xagave, and gave it a little stir (and multiplied the recipe by 8). Sweet, but not overpowering. Strong, way strong. Seriously though, coffee and margaritas were kind of made to go together, right (I keed, I keed!). But smooth segue, right?
