Easy Potato Soup

The local farm market (not farmer’s market, it one guys stand and it’s permanent.  Reminds me of New Jersey.  I digress…) had an amazing sale on potatoes.  He was selling 10 lb. bags for $1.99.  I was all over that like white on rice, and bought 2 bags.  Now I have 20 lbs. of potatoes, and I don’t know exactly what to do with all of them.  Any ideas what I can do with 20 lbs. of potatoes?

My first thought was a super simple comfort food that I always enjoy-potato soup!  Not only is it easy, but it makes a ton, and freezes really well.  How can you possibly go wrong?

This recipe requires time, but not a whole lot of ingredients or work.  How could you not love a recipe like that?  For real.  Plus, there are absolutely no measurements.  This is really just something you can’t screw up, and you should do whatever feels right.

First you want to cut up a ton of onions (a ton being 4 or 5.  My view of things is quite skewed).  I cut them into slices, but you can dice them too.  Whatever makes you happy!

DSC03071Now is the time when I realize how thankful I am that I swam in college.  Goggles have so many uses!  I look wicked cool, don’t I?

DSC03069 So to start, I throw caution to the wind, and put a whole stick of butter in a soup pan and let it melt over medium heat.  That’s right, a whole stick of butter.  Don’t worry, this makes a crap ton of soup, so the little bit of butter doesn’t count anyway.

Then I throw the onions in and let them sauté for awhile.  I let them get nice and soft!

DSC03073Next come the potatoes.  I’m assuming you don’t have a mountain of potatoes, but a normal size bag should do the trick.  I couldn’t tell you how many I used, but I can tell you my garbage can was chock full of potato peels.  After I peeled all of the potatoes, I diced them, and threw them in the pot.  I also put in water to come about an inch above the potatoes.  After this came to a boil, I let it simmer for an hour.  During this time, you don’t have to do a thing.  I played with the puppy, played some guitar hero, had a little wine.  It was a good time.

DSC03078 After an hour, add a bag of baby carrots.  Let it simmer another half hour.  I used this time to talk to my parents and catch up on blog reading.  This soup makes me so productive!  I even started dinner (we didn’t have soup for dinner).

DSC03079 After the carrots have gotten soft, out came my trusty BFF, the Smart Stick. Everyone should own one of these.  I really believe that.

I added a little salt, and a lot of pepper to the pot, then began to puree.  You could also do this in a blender, or a Vitamix (a girl can dream, right?).

DSC03087That’s it.  I told you it was easy, didn’t I?  It’s the most perfect comfort food, especially with a little cheese thrown in (or you could be really adventurous and make it with cheese).  Cheese and potato is a great combination!

Sometimes, while I cook the men of the house nap.  It’s a really tough life here.

  1. I’m going to call this the “Pesach Post,” because that’s what it reminds me of — twenty pounds of potatoes would last a day here at that time of year! (It’s why I hate potatoes and will not touch them. :p) And the goggles… we’ve done that here when grating the horseradish! 😉

    I don’t think I have a favorite “comfort food” … and I don’t like potatoes unless they’re sweet potatoes, in which case I like them roasted. I think my favorite soup is mushroom barley; and yes, you absolutely could. :p

    If you want to drive yourself insane, you can make potato starch. (No idea WHY you’d want to do that, though!)

  2. I have some potatoes that I need to cook. This would be perfect. I think I know what I am doing tonight while the husband is playing softball!

    My fave comfort food is probably my mom’s chicken and rice. And I love potatoes mashed, actually I guess they are whipped. As for soup, chicken tortilla for sure.

  3. 20lbs of potatoes?! You can make mashed potato and freeze in portions in sandwich bags, then thaw and reheat as needed. Great way to thick soups/stews or to use as toppings for things like shephards pie. Vienniese (sp) potatoes are also a great side dish for Thanksgiving- mash, then put into a sandwich bag. Cut a hol in the corner and squeeze the potatoes through into swirly cone shapes, sprinkle with paprika and bake until hot and slightly crusty 🙂 Or Scottish macaroons…sounds really weird, but you mash the potato with confectionars sugar, dip into melted chocolate, coat with coconut and leave to chill. SO good.

    Favourite comfort food- anything with melted cheese or anything creamy. Mac and cheese or some kind of cheesy grilled sandwich/wrap, or a dessert like hot apple cobbler topped with custard or whipped cream.

    Just carbs. A bag full of carbs.

    And co-sign on Elli’s Scottish macaroons. I don’t know why I haven’t gotten around to making those yet this fall. I promise they’re good stuff. It’s a family favorite.

  8. mmm when we were little one of my brothers could cook two things: potato soup and cobbler.
    i loved when he decided he was making us lunch.
    if you eat pork (i’m guessing you might not….) some bacon tossed in is good in potato soup too!

    i really like what i call “taco potatoes”…. you take everything you’d put on a taco (sour cream, cheese, taco meat, olives, salsa, etc…) and put it on a baked potato. i made it for the fiance and he thought i was nuts.

  10. I need one of those stick blenders! My sis has one and LOVES it. I just have a blender; I don’t own a food processor nor a Vitamix 😦 But I love potatoes! Recently, I made a potatoes au gratin and brought it to a party – it was a huge hit! Shepherd’s pie is one of my faves, too!

  12. I like to make turkey hash with potatoes. Or you could make potato pancakes. They are delicious with sour cream and/or applesauce. That is quite a deal, 20 lbs. for 4 bucks. Wow!

  15. Morgan, you are SO damn CUTE!!! HAHAHAH!! I loved that pic with the goggles…ah, you just brightened me up, and I didn’t think it was possible!

    I have a bag of potatoes I need to use up…must make soup!!
    My favorite way to eat potatoes is to roast in oven with little slits all down its back…there’s a special name for it, I just forgot.
    My other fave is to slice them up thin and top it on casserole with cheese as a crispy and cheesy crust!

    Fave soup = kabocha soup!
